Brute De Forge Hefty AEBL Stainless SantokuThis blade is an as forged Santoku. I started thicker and have a slower taper on the blade,making it hefty compared to my normal chef knives. The balance is about an inch forward of the heel, The spine is 0. 14(~9 64) at it s thickest. the heel height Is around 2 1 4" or so. The steel is the real fun part. This is a hand forged stainless blade, and with the correct heat treat regimen it performs as well as my normal stainless blades. The handle is

There’s small, and then there’s this book. It’s true that this is a pocket size book. Look at the dimensions and then imagine 6pt font. Giving it four stars because info is great- succinct, useful, and up to date! But taking away one star because it should come with a magnifying lens.
