Zonin Cuvee Rose Extra Dry Sparkling Wine 75clThe must is obtained by soft pressing of Glera and Pinot Noir grapes. Then 50% undergoes an initial fermentation at a controlled temperature of 18 C (64 F), while the remaining 50% is stored at 0 C (32 F) as unfermented must. They are assembled and transferred into pressurised stainless steel tanks where the secondary fermentation occurs to create bubbles according to the traditional Charmat method. All the pieces were accounted for, and some even had extra pieces, maybe just in case they need changing. It was a bit like putting together a piece of IKEA furniture, though I went slower than usual so as not to make any mistakes. It wasn’t too hard to put together myself, and helps give my studio apt a feeling of space and privacy for my bed. I only wish it had a lovely Japanese design on it, but it does amazingly seem to match the wall color.
